1993 Dunn Howell Mountain Cabernet

How long does it take for a Dunn Cabernet take to age to perfection? This has been a question that still plagues me after buying Randy Dunn's wines for over 15 years. Tonight I pulled the 1993 Howell Mountain Cabernet to bring to the JDRF Gala in Long Branch. However, I was not sure if the wine would be ready to drink; even after 13 years of age!

In the past, my experiences have shown me that attempting to drink a Dunn Cabernet under 10 years is a guaranteed disappointment. Randy makes his wines with significant tannins that before 10 years you get a mouth full of "wood". Dunn is the only California winery that I have tasted that needs such a long time in the bottle to mature. The end result however is equally as unique; delivering an elegant presentation of Howell Mountain fruit.

Tonight the wine was very well received but in my opinion, it still needs 3-5 years to complete the evolutionary process of yielding tannins to emerging fruit. The wine had a wonderful nose and there were no signs of negative aging in the glass. This is good news since I hold many older vintages of Dunn in the wine cellar. My advice is to continue to be patient if you own Dunn wines. The new hold and try period may turn out to be 15 years!
